In 2000, the Holligan family left the hustle and bustle of busy corporate life in the hospitality and leisure industry in London for the “good life” in Tullow, Co. Carlow.
For over a decade Pamela Holligan has been the driving force behind the wonderful surroundings and food at Ballyderrin House that has earned this well known country guesthouse with the recommendations that it has received from well respected travel guides such as The Bridgestone Guide and Georgina Cambell.
In addition to being a qualified diet and nutrition advisor, Pamela is a Ballymaloe trained chef with extensive experience and expertise in food and wine.
She has undertaken specialist training with AGA in the UK and is one of the fiew AGA trained chefs in the country. As a result the Ballyderrin breakfast cooked on the AGA is a pleasure in itself and well worth the stay.
Pamela has also studied wine with the WSE wine Trust and the Wine Development board of Ireland.
